HONEY, GARLIC & BUTTER ROASTED CARROTS:
This turned out to be a real winner when trying to please all of my kids in one shot. My eldest loves garlic and butter, but isn’t sure about carrots, whilst my younger two are big fans of carrots. Wham! Mix all this together and everyone’s happy…I kid you not. Serve alone, or with a roast of some sort (beef, chicken, pork etc.).
INGREDIENTS:
- 4-5 Carrots
- 3/4 Stick Unsalted Butter
- 2-3 Garlic Cloves, Minced
- 1 Tbsp Honey
- 1 Pot Boiling Water
- 1 Frying Pan
PROCESS:
Peel Carrots. Chop into 1/2″ thick strips. I tend to keep them to 3-4″ long pieces, although you can do as you wish. Blanch carrots until slightly softened to touch (2-3 minutes). Don’t cook them all the way! Remove and cool. Heat frying pan and combine butter, garlic and honey. Cook until melted and garlic is browned. Toss carrots into the mix and fry for 5 minutes or so until gooey, softened and caramelized. Enjoy!
