
POTATO SALAD:
This is literally a fool proof way to create an amazing potato salad. I honestly think it would be harder to get it wrong that to get it right. I love all the ingredients listed, but you can edit as necessary if you’re not so keen on egg or too much onion as an example. In the end I consider this salad to be fantastically versatile and in general a really tasty side dish. It goes incredibly well with something like roast chicken, as well as anything and everything barbecued. Go on, try it out!
INGREDIENTS:

15-20 Fingerling Potatoes (Small To Medium Size)
- 1/2 Red Onion (Diced)
- 3 Spring Onions (Chopped)
- 8-10 Rashers Smoked Bacon (Cut In 1/2″ Pieces)
- 1 Cup Celery (Diced)

1 Tsp Salt
- 1 Tsp Pepper
- 1 Cup Mayonnaise
- 4 Hardboiled Eggs (Cut In Quarters)
- 2 Tbsp Apple Cider Vinegar
- 1 Tbsp Dill Pickle Juice (Drain From Store Bought Jar)
- 3 Tbsp Fresh Parsley (Chopped)
- 1 Large Mixing Bowl
- 1 Large Saucepan (With Salted Water)
- 1 Small Saucepan (With Salted Water)
- 1 Frying Pan
- 1 Stovetop
- 2-3 Sheets Paper Towel
PROCESS:
Bring your saucepan of salted water to a boil over medium heat. Add the potatoes and cook for approximately 15 minutes until they are soft to their centre (you can check with a fork or knife). Once cooked remove, drain and cool for a few minutes. In tandem with the potatoes cooking, boil your eggs for 10-11 minutes until hard-boiled and fry the bacon in a frying pan until crispy. Once ready, remove the eggs and then cool and peel them, as well as removing the bacon and leaving it on some paper towel to ensure any excess oil is removed.
In your mixing bowl combine the potatoes (chop any larger ones in half or thirds), eggs, bacon, celery, red onion and spring onion to the wet ingredients (mayonnaise, apple cider vinegar and dill pickle juice). Add the 2 Tsp chopped parsley and salt and pepper to taste and toss thoroughly. I like to let the potato salad rest for 30 minutes or so before serving to ensure all flavours are melded together, but it’s tough to resist not picking at it (Sarah, you know you do)!!! Once ready to serve sprinkle the remaining 1 Tsp chopped parsley and enjoy.
